Top Tips to Create the Perfect Christmas Roast

Introducing you to our Christmas in July roast! Served daily in The Bistro, we sat down with our Head Sous Chef and some of your favourite Bistro Cooks to find out just what it takes to create the perfect roast.

What food items would your perfect Christmas roast include? 

No matter the meat, you can’t go past roast potatoes. Roasted until their crispy and golden brown on the outside and fluffy on the inside, I enhance the flavour of my potatoes by covering them in garlic and butter.

Who would you invite to share a Christmas roast with?

Family and friends; they always make the day entertaining and fun!

What wine do you pair a roast with?

So many great wines to choose from but I would have to go with a nice red. Pomerol / Chateauneuf du Pape is an all-time favourite.

Traditional Winter Christmas or Aussie Summer Christmas?

A traditional white Christmas with a festive atmosphere and snowy conditions. One of my favourite festive season activities is roasting chestnuts on an open fire.

What are your top tips to cooking the perfect Christmas roast?

If I could give three tips to people it would be:

  • Basting your roast to keep the meat moist – this means collecting all the cooking juices from the pan and brushing them onto the meat.
  • Collecting all the pan juices to make a delicious gravy from scratch.
  • Keep the meat leftovers! These can often be made into a great Club sandwich later.

What food items would your perfect Christmas roast include? 

My idea of a perfect Christmas roast is all about having great quality meat and vegetables.

When the produce is fresh and locally sourced, the meal always turns out delicious.

Who would you invite to share a Christmas roast with?

Christmas is all about sharing with loved ones and friends, so of course, I would invite those closest to me.

What wine do you pair a roast with?

It really depends on what protein I’m cooking with on the day. If I’m cooking a roast turkey, I find a good chardonnay or pinot noir is the perfect accompaniment.

Traditional Winter Christmas or Aussie Summer Christmas?

Traditional all the way. I’m originally from Croatia and in Croatia, we celebrate with over-the-top amounts of food which everyone can dig into, share and enjoy.

What are your top tips to cooking the perfect Christmas roast?

Cook with love! Your guests can always tell if you’ve put your heart into preparing a meal for them, it always shows on the plate. As long as you enjoy what you’re cooking, so will your guests.

What food items would your perfect Christmas roast include? 

For me, it’s all about two dishes; juicy whole chicken and my wife’s delicious mango cheesecake she makes every Christmas.

Who would you invite to share a Christmas roast with?

Aside from family and friends, I would invite Dwayne Johnson aka. “The Rock;” I’m a big fan of him and his movies!

What wine do you pair a roast with?

I like a glass of good quality champagne with my Christmas roast. Moet & Chandon makes any meal feel like a celebration.

Traditional Winter Christmas or Aussie Summer Christmas?

Both have great aspects to them I love. Aussie summer Christmas brings with it great weather, seafood and the beach, while a traditional Winter Christmas brings mulled wine, Yorkshire puddings and all the delicious winter recipes.

What are your top tips to cooking the perfect Christmas roast?

Preparation and time management. Being organised and prepping what you can on the day or night before can make cooking more enjoyable.

What food items would your perfect Christmas roast include? 

Believe it or not, my favourite thing to eat on Christmas day is a roasted goat. In my home town of Nepal, we celebrate with a whole roasted goat that we stuff with flavoured rice and vegetables.

Who would you invite to share a Christmas roast with?

Family and friends, old and new. Since moving to Australia I’ve made so many close friends. I would love to have all my family and friends from Nepal over in Australia.

What wine do you pair a roast with?

I’d prefer a nice cold beer to enjoy with my roast with. Stone and Wood would be my go-to with a roast.

Traditional Winter Christmas or Aussie Summer Christmas?

Aussie summer Christmas 100%. The day is spent drinking beer, grilling food on the BBQ and playing cricket on the beach – you can’t beat it.

What are your top tips to cooking the perfect Christmas roast?

It’s always good to experiment with flavours but I think when it comes to a Christmas roast, traditional is best. I cook recipes passed on from my Grandmother and they are enjoyed just as much, if not more, than modern dishes I try out.

What food items would your perfect Christmas roast include? 

Whatever we have at The Bistro! I absolutely love the varieties we have on offer every year, I think the quality of the food is just beautiful. Two of my favourite items to eat are the apricot and cranberry sauce or the crispy pork belly crackling.

Who would you invite to share a Christmas roast with?

Family, friends and my four beautiful grandchildren, they are my world!

What wine do you pair a roast with?

I really enjoy a very dry red Shiraz, I’m not fussy about labels, as long as it tastes good I’ll enjoy it!

Traditional Winter Christmas or Aussie Summer Christmas?

Definitely a Winter Christmas. I’m from Croatia where it can get absolutely freezing and I’m still getting used to the Australian heat after all these years. A cold roast by the fire is my idea of the perfect meal.

What are your top tips to cooking the perfect Christmas roast?

Cook with the whole family. When you get everyone involved the whole day is just so much fun.
